From Uruguay & Argentina

At this point, you may be asking yourself, what is #chimichurri ?

Chimichurri is an Argentinian sauce made with olive oil, red wine vinegar, garlic, fresh herbs, and spices. This uncooked, super fresh, and vibrant sauce can be used as a marinade, dipping sauce, or condiment to drizzle over meat, vegetables, and more.

And from a health standpoint, chimichurri is loaded with good-for-you benefits, including calcium, carotenes, iron, and vitamins A and C (from the parsley) and calcium, fiber, iron, and vitamins E and K (from the oregano), as well as heart-healthy garlic and the monounsaturated fat found in olive oil, which may help to lower total cholesterol.

1/2 cup olive oil
2 tablespoons red wine vinegar
1/2 cup finely chopped parsley
1/2 cup finely chopped coriander
1 small shallot finely chopped
3-4 cloves garlic, finely chopped or minced
2-3 small red chilies deseeded and finely chopped
3/4 teaspoon dried oregano
1 level teaspoon of coarse salt
1/2 teaspoon pepper.
1 tablespoon fresh lemon juice

(I prefer to use olive oil even though some say it’s not the traditional Argentinean choice)

Additional herbs based on your taste: thyme, basil, coriander, etc I personally love coriander 🌿
